Vegan cashew cream cheese


This flavoursome, good-for-you ‘cheese’ might just fool you. It’s tangy and delicious on bread, crackers or as a dip and can be used as a vegan cheese sauce for lasagnes or cauliflower cheese. Have I said cheese enough times for you to want to make it yet?

1 cup of cashews, soaked overnight
1/8 – 1/4 of a cup of water
2 cloves of garlic
1 tablespoon of apple cider vinegar
2 tablespoons of lemon juice
1/2 a tablespoon of tamari sauce
sea salt & pepper to taste

Blend up and serve, however you wish. It would be great with these easy flax seed crackers.

(Cashew nuts are high in copper and magnesium, making them good for the skin and the nervous system. They also contain oleic acid, the same compound found in olive oil that supports cardiovascular health and are high in antioxidants. Garlic is an immune booster and an anti-inflammatory. Apple cider vinegar is an everyday wonder – it’s good for the digestive system, the circulation, the skin and is highly alkallinising, as is the lemon. Tamari is a gluten free alternative to soy sauce and gives a slightly tangy, cheesy taste.)
