Inspired by last night’s dinner with the spectacular Bell, this slow cooked tomato and herb sauce is rich and vibrant. It’s fantastic on pasta or quinoa. For this recipe, I used Munirah’s olive oil infused with chilli, coriander seeds and cloves. Thank you, friends! x

4 large handfuls of cherry tomatoes
½ an onion
a handful each of fresh basil, chives and parsley, roughly chopped
a sprig of fresh rosemary, finely chopped
50 ml cider vinegar
a splash of tamari sauce
½ small glass of red wine
olive oil

Soften the onion in olive oil. Add all the other ingredients, stir and bring to the boil. Cover and simmer on a low heat for 45 minutes.

(Tomatoes are packed full of the antioxidant, lycopene, which helps to ward off diseases. Cooking breaks down the cell walls of the tomatoes and makes this lycopene more available. Tomatoes also contain the skin healing vitamins C and A. The herbs are infinitely beneficial: they are anti-inflammatory, antiseptic and cleanse the blood and that’s just the start…)
