raw spiced rooibos apple and walnut crumble with coconut custard


I don’t think I can elaborate on the title, except to say this is sugar free, dairy free and as delicious on a windy, shadow-chasing day as it sounds.

2 apples, grated
pot of rooibos tea for one
1 teaspoon of cinnamon
¼ teaspoon of nutmeg
2 teaspoons of honey
zest and juice of ½ a lemon

Mix the ingredients together and leave to infuse for 4 hours.

For the crumble:

1 cup of walnuts
¼ cup of hazlenuts
1 cup of dates
a pinch of salt

Blend in a processor until the mixture attains a crumble like consistency. Pour off any excess liquid from the apple base and top with the crumble.

For the custard:

½ tin of coconut cream
2 eggs
1 teaspoon of vanilla essence
1 tablespoon of honey

Whisk the eggs into the coconut cream on a low heat for about 5 minutes. Add the honey and vanilla essence and keep whisk until the custard has reached the consistency you desire.

(If you ate this with a side of greens, it would give you all the components of a balanced meal! It’s packed with vitamins, good oils, protein, minerals and alkalinizers, and is great for breakfast too!)
