Pink grapefruit, beet and chia smoothie


Baby is on the grow so I’m on the slooow today. But working from bed has its charms when you are accompanied by this liver loving smoothie, busting with fruit and veg. Packed with vitamins and loaded with protein and good fats, it will leave you feeling full, refreshed and vibrant.

1 tablespoon of chia seeds, soaked for 4 hours + in half a cup of water
1 pink grapefruit, peeled
1 peach
1 beetroot, peeled
1 inch chunk of root ginger, peeled
2 heaped teaspoons of solid coconut cream
1/2 cup of water

Blend and enjoy!

The phytonutrients in beets make them anti-inflammatory and anti-oxidising. They also pack an iron punch and cleanse the blood, as does the pink grapefruit. Pink grapefruit is highly regarded in Ayurvedic medicine as it cleans the digestive tract and stimulates bile for better toxin elimination. The ginger adds an immune system and circulatory boost, the chia seeds provide high level protein and the coconut cream offers anti-viral properties as well as good fats. The peach is there because it is sweet, juicy and full of Vitamin C. This is an all round winner – filling, fast, fantastically flavoured and such a gorgeous cheering colour.
