Lean chicken burgers with quick red onion chutney

These delicious lean herbed chicken burgers are the simplest throw together and lovely to make with friends. We shared them with avocado, spinach leaves and quick red onion chutney between slices of sourdough rye bread. You can use any herbs you like – any that are to hand – I used a selection of chives, sage and thyme. Enjoy these, with lots of love, xxx

For the burgers:

(serves 4)

300g free range chicken mince
1 egg
a large handful of rolled oats
zest of 1 lemon
1 tbsp fresh herbs
generous amount of Himalayan salt and cayenne pepper to taste

Whizz all ingredients together in the blender and form into 8 little patties. Refrigerate for a couple of hours. When ready to serve, fry the burgers in a large frying pan for 2 minutes on each side until golden brown and cooked through.

For the cheat’s chutney:

1/2 red onion
1/2 tbsp olive oil
2 tbsp balsamic vinegar
black pepper

Finely slice the red onion and soften in the olive oil in a small saucepan. Keep on a high heat and splash in the balsamic vinegar. A lot of the vinegar will evaporate so add more as you see fit so it is as tart as you would like it.
