Hot cross buns are my favourite festive food! These sugarfree, glutenfree muffiny delights hit the spicy goodness nail on the head. The ingredients are all so good for you too, so make at least double of this recipe! Happy Easter! x

½ cup coconut flour
¼ cup psyllium husk
1 tablespoon of arrowroot flour
1 tsp baking soda
1tsp mixed spice
½ cup raisins
zest of 1 orange
juice of ½ orange
2 eggs
½ cup coconut oil, melted
1/4 cup rice malt syrup

For the crosses, add water to ½ tablespoon of coconut flour until a paste forms.

Spoon the batter into a muffin tray lined with greaseproof paper and bake for 20 minutes at 180 degrees celsius. Add the crosses and bake for a further 5 minutes.

    I made these for our Easter picnic today! Substituted the coconut flour and psyllium husk for cheap wholemeal wheat flour and added a small lonely banana, worked a treat! I also soaked the raisins in earl grey tea overnight so they were plump and had some extra flavour. Thanks for this gem!

      Wonderful! Soaking the raisins in tea would have taken it to another level. Feel honoured to have been a small part of a Berlin Easter. x
