Chai tea is so delicious and healing but often shop bought bags smell enticing yet taste a little weak. Making your own means you can ramp up the spices and put your own twist on it. This is a really Wintry sort of a blend to be enjoyed with nut milk and honey or just as is.

1 cinnamon stick
1 teaspoon of ground nutmeg
1 tablespoon of whole cloves
1/2 tablespoon of anise stars
1 teaspoon of ground ginger
1/2 teaspoon of cinnamon powder
1 tablespoon of whole cardamom pods
1 teaspoon of fennel seeds
20 black tea bags

Grind the spices in a coffee bean grinder or a food processor until fine. Cut a corner off each tea bag and pour in 2 – 3 teaspoons of the spice blend. Tie with cotton, put the kettle on and settle in.
