carrot and herb slaw


This is sunshine in a bowl. It tastes so much better than normal coleslaw, is fully vegan and incredibly cheap to make.

If you have a grater blade on your food processor, you’re in luck. If not, flex those forearms.

6 medium carrots, grated
1 1/2 avocadoes
juice of 1 lemon
1 dessert spoon dijon mustard
a handful of parsley, chives and lemonbalm
1/4 cup sesame seeds

Mash up the avocado with lemon juice and mustard. Add water to loosen. The consistency should be that of slightly watered down mayonnaise. Finely chop herbs and add to the bowl of grated carrots. Stir through the sesame seeds and avocado dressing.

(Carrots contain the antioxidant, beta-carotene which helps us to access Vitamin D. They are also full of Vitamin C. Sesame seeds are your calcium fix, avocadoes give you good fats and allow us to absorb the nutrients within the other veg and lemon alkalinizes and cleanses the system.)
