I have to share with you this delicious healthy dessert recipe! So few ingredients and no time at all to prepare means you could eat it for dessert tonight (or even breakfast, you English crew)! Berries from the garden, plums scrumped from an overhanging tree, cinnamon, honey, sugar-free fruit concentrate and yoghurt are the only ingredients.
This makes enough for two to share.
Stew a large handful of blackberries and half a biggish plum in a saucepan with
a tablespoon of Barker’s ‘berrylife’ juice concentrate
a teaspoon of cinnamon
a teaspoon of honey.
When the fruit has softened and the sauce thickened into a coulis, set to one side to cool while you slice the other half of the plum into thin segments.
Arrange the plum slices in the bottom of a glass, then add alternating dollops of fruit coulis and plain yoghurt. Finish with a yoghurt layer and add a strip of orange rind or a whole berry just to look pretty before you dive in.
(This is free of refined sugar, which is fantastic and kind of unbelievable as it tastes so sweet. The yoghurt contains probiotics for healthy gut flora and the fruit is antioxidising. Cinnamon is used in Ayurvedic medicine as a cleanser and to fire the metabolism so it’s a great after dinner spice.)
