Almond meal and coconut porridge


A lovely nourishing breakfast porridge. Perfect for those who prefer not to eat grains, this porridge uses ground almonds and coconut instead of oats. The consistency is similar to a fine oatmeal and the taste is deliciously creamy, warming and lightly spiced. Topped with a sharp green apple and roughly chopped brazil nuts, it’s a substantial, wholesome Saturday treat.

½ a cup of coconut milk
½ a cup of ground almonds
½ a cup of dessicated coconut
1 teaspoon of cinnamon
¼ of a vanilla pod (scrape the insides out to use in the porridge and keep the empty pod for another time)
1 teaspoon of rice malt syrup (optional)
grated green apple and chopped brazil nuts to serve

Heat the milk in a small pan. Add the remaining ingredients and keep stirring for five minutes until the mixture thickens. Pour into a serving bowl, add the apple and brazil nuts and a sprinkle of extra cinnamon.
